A Night Worth Slowing Down For

There’s something special about a night out with good friends. The kind where there’s no rush, no distractions, just great food, great wine, and even better company. That was exactly the vibe for our Saturday night at Porcine, Paddington.

From the moment we walked in, Porcine set the tone. Warm lighting, a lively but intimate atmosphere, and that relaxed confidence you only get from a place that knows exactly what it’s doing. It’s the kind of restaurant that doesn’t need to shout and it just quietly delivers, course after course.

Settling in with friends always brings a different energy. There’s an ease to it. Conversations overlap, laughter comes naturally, and before you know it, you’ve been there an hour without even noticing. It’s what dining out should feel like.

Setting the Tone with Giaconda Chardonnay

We started the evening with something we’d been looking forward to sharing, the cult favourite, a bottle of Giaconda Chardonnay. There’s always a bit of anticipation opening a bottle like that, will it live up to the hype? But from the first sip, it didn’t disappoint. Elegant and layered, with beautiful texture and balance, it was the kind of wine that gets everyone talking, passing glasses, comparing notes, and going back for another taste. Could it be the best Australian Chardonnay?

Classic Bistro Food Done Right

The food at Porcine is perfectly suited to this kind of night. Rich, comforting, and thoughtfully executed without being overcomplicated. Each dish felt generous and full of flavour, the kind that invites you to slow down and savour it. Plates were shared, recommendations were made, and every arrival at the table added to the experience.

As the night unfolded, so did the conversation, reminiscing on a few nostalgic moments, and plenty of “remember when” thrown in for good measure. It’s those little things that turn a simple dinner into a great night out.

Opening Something Special: Wendouree 1997

Then came the another standout of the evening: a 1997 Wendouree Shiraz Malbec. I mean, another cult wine, but we haven’t been wowed but the past bottles we’ve opened. Could this one be different? We all shared the same anticipation, we let is breathe for about 90mins, careful pour, the swirl, the first sip.

And it was everything you’d hope for and more from an almost 30yo wine. It was beautifully matured, with deep, savoury complexity and a smoothness that only comes with time. It paired effortlessly with the richness of the food, but more than that, it added another layer to the evening. The perfect duo for the night.

Dining out with good friends has a way of reminding you what it’s all about. It’s not just the food or the wine, even though both were exceptional, but it was sharing that experience together. The laughter across the table, the clink of glasses, the stories that get better with every retelling.

As we wrapped up the night, there was that familiar reluctance to leave or do we kick on? Simple, really. Nights like these always stay with you.
