🍷Wine of the Month – June

1981 Wolf Blass Black Label

Wolf Blass

Founded in 1966, Wolf Blass is one of Australia’s most recognised wine producers. The winery was established by German-born winemaker Wolfgang Blass in South Australia’s Barossa Valley. Wolf Blass became famous for its multi-regional blending philosophy. This approach combines fruit from leading South Australian regions to create balance and complexity. The winery’s flagship Black Label has become one of Australia’s most awarded red wines. Today, Wolf Blass remains a benchmark for premium Australian Cabernet Shiraz blends.

The Wine

The 1981 Wolf Blass Black Label Cabernet Sauvignon Shiraz is a remarkable expression of Australian fine wine. Crafted from premium South Australian vineyards, it showcases the power of Cabernet Sauvignon and the generosity of Shiraz. The wine was made with longevity in mind and has evolved beautifully over more than four decades. It is a wine that demonstrates why the Black Label remains an Australian icon. Every bottle offers a glimpse into the history and potential of Australia’s great red blends.

Official Tasting Notes

The 1981 Black Label opens with aromas of cedar, leather and dried herbs. Layers of dark plum and blackcurrant add depth and complexity. The palate is supple and savoury, with notes of tobacco leaf, forest floor and gentle spice. Fine tannins and bright acidity give the wine freshness and structure. The finish is long, elegant and remarkably vibrant for its age.

Why It Was Our Pick of the Month

Some bottles are memorable because of what is in the glass. Others become unforgettable because of the people and the moment. The 1981 Wolf Blass Black Label was our Wine of the Month because Mark Dietz generously shared a beautifully cellared bottle from our birth year with us. Birth-year wines are always special. They become even more meaningful when shared with people who appreciate both the wine and the experience. At 45 years young (yes showing our age) this was still alive and singing! Absolutely Amazing!

Food Pairing + Occasion

Birth-year wines are always a special occasion, particularly when shared with people who truly appreciate the moment and make it a memorable experience.
