In this week’s Thoughts of the Week, I want to talk about one thing that completely changed the way I taste wine, acidity. It’s one of those topics people hear …all the time, but rarely break down properly. When we say a wine is acidic, what does that actually mean, and why does it matter?

What I learned on this wine journey is that acidity isn’t just one thing. There are actually five different types of acid you can find in wine, and once you understand them, tasting becomes a whole lot more interesting. We start with tartaric acid, the most common and the one most people associate with that fresh, crisp, mouthwatering feeling. Then we move into malic acid, which often shows up as green apple flavours in cool climate wines like Riesling or young Chardonnay.

From there, we talk about lactic acid, which comes from malolactic fermentation and gives those creamy, buttery textures you find in styles like Napa Chardonnay, Margaret River, or Meursault. We also touch on acetic acid, often called volatile acidity, which can add complexity in small amounts but quickly turns unpleasant if it goes too far. Finally, we look at citric acid, which brings citrus driven freshness, especially in young whites and rosé.
